A 50% blend of the finest Riesling and Viognier from Clos Cor Ví. Seeking excellence in crafting the finest white wine possible, the part of the plot that ripens later is selected to vinify Riesling and Viognier separately.

The grapes are chilled to subsequently carry out a 24-hour pre-fermentation maceration. The must is then pressed and lightly racked, fermenting at controlled temperature.

LA AÑADA

The year 2020 was characterised by a cool winter, with widespread rainfall throughout the winter and early spring, which led to a healthy and balanced harvest.

CRIANZA

A fundamental part of the Cimera production process is ageing on lees in barrels. The Viognier is aged for five months in third-use acacia barrels, enhancing the aromas and floral notes characteristic of the variety.

The Riesling is aged separately in French oak barrels with volcanic toast to enhance the minerality representative of this grape variety.

Once the first phase of ageing is complete, the wine is blended and remains for four more months in French oak barrels before being bottled. The wine remains throughout the ageing process with fine lees in suspension.

ANÁLISIS SENSORIAL

COLOR

Color amarillo pajizo, con reflejos verdosos.

AROMA

En nariz es franco en aromas, frutal y floral, recuerdos a cítricos como el pomelo y la lima, especiado y con notas a hierbas mediterráneas.

SABOR

Tiene una entrada fresca y fluida en el paladar, buena acidez equilibrada con fruta de hueso y marcada mineralidad. Largo, con buen final donde predominan los cítricos y notas salinas.
